I wanted an egg sandwich that felt like something a café would charge ₹500 for… and somehow still have people waiting outside for.

So I stopped frying the eggs.

Instead, I baked them slowly in a water bath.

Low heat. Gentle cooking.
And the texture changes completely.

Soft. Silky. Almost custardy.

Then everything else just supports it:

Whole wheat bun toasted in butter.
Gouda, barely melted.
Roasted garlic Greek yogurt whipped into this creamy spread.
Thin streak of sriracha.
Fresh chives on top.

Nothing here is actually fancy.

The difference is just patience.

And honestly?
Soft eggs change everything.
