Learn how to make Alfredo sauce without heavy cream using regular milk, butter, garlic, flour and freshly grated Parmesan. This easy Alfredo sauce with milk is smooth, creamy and ready in 15 minutes—without heavy whipping cream or cream cheese.
The key is adding the Parmesan off the heat, so it melts smoothly instead of becoming grainy. Serve this homemade Alfredo sauce with fettuccine, chicken, shrimp, broccoli or your favorite pasta.
Makes about 2¼ cups of sauce
Enough for 12 oz / 340 g fettuccine
Prep: 5 minutes | Cook: 10 minutes | Serves: 4
INGREDIENTS
* 3 tbsp / 42 g unsalted butter
* 2 garlic cloves, very finely minced
* 3 tbsp / 24 g all-purpose flour or plain flour
* 2 cups / 480 ml whole milk, warmed
* 1 cup / 90–100 g Parmesan, freshly and finely grated
* ¼ tsp freshly ground black pepper
* ¼ tsp fine salt, then more to taste
* 2–4 tbsp warm milk or pasta water, if needed
* 12 oz / 200 g pasta
* Parsley and extra Parmesan, optional
In the UK, use full-fat milk. In Australia, use full-cream milk. No double cream or thickened cream is needed.
HOW TO MAKE ALFREDO SAUCE WITHOUT HEAVY CREAM
1. Melt the butter over medium-low heat. Add the garlic and cook for 30 seconds without letting it brown.
2. Whisk in the flour and cook for 60–90 seconds, keeping the roux pale.
3. Add about ½ cup of warm milk and whisk until completely smooth. Add the remaining milk gradually.
4. Simmer gently for 2–3 minutes, until lightly thickened but still pourable.
5. Remove the pan completely from the heat and wait 30 seconds.
6. Add the Parmesan in three batches, whisking each one smooth before adding the next.
7. Season with salt and black pepper. If the sauce is too thick, add warm milk or pasta water one tablespoon at a time.
8. Toss with hot fettuccine and serve immediately.
