Next time you’re making chicken cutlets, throw them on the grill. In Sicily, this is a very popular way to cook them. I cooked them over carbonella di legna (Italian wood charcoal), which gives an incredible smoky flavor while keeping the chicken juicy and the breadcrumb coating crispy.
