INGREDIENTS:
2/3 cup unsalted butter
5 & 1/2 cups mini marshmallows (one 10 oz bag), divided
1 teaspoon vanilla extract
1/4 teaspoon salt
6 cups Cocoa Krispies cereal (chocolate crispy rice cereal)
1/3 cup semi-sweet chocolate chips, plus more for topping
Flaky sea salt for topping
INSTRUCTIONS:
Grease an 8x8 inch baking pan with butter or non-stick spray.
In a large pot, melt the butter over medium-low heat. Continue cooking the butter, stirring frequently, until it turns a golden brown color and has a nutty aroma. Be careful not to burn it.
Add 5 cups of the mini marshmallows to the pot with the brown butter. Stir constantly until the marshmallows are completely melted and smooth. Remove the pot from the heat and stir in the vanilla extract and salt.
Add the Cocoa Krispies to the marshmallow mixture and stir until well coated.
Gently fold in the chocolate chips and the remaining 1/2 cup mini marshmallows while the mixture is still warm so they melt slightly and create a marbled effect.
Press the mixture into the prepared pan using a spatula or wax paper. Top with more chocolate chips and a sprinkle of sea salt. Allow the treats to cool and set at room temperature for about 30 minutes before slicing into squares.
Makes 16 squares. Prep 5 minutes, cook 10 minutes, total 15 minutes.
TIPS:
Use fresh marshmallows for the chewiest texture
Don't overcook the marshmallows or your treats will turn out hard
Press the mixture in gently, not firmly, for soft and chewy results
Store in an airtight container at room temperature for 3-4 days, or freeze for up to 2 months
