Some things bring you right back home.

After traveling from Florida to New Jersey today to spend time with my dad, the first words out of his mouth were, “Can you make me Pasta Fagioli?” So that’s exactly what I did.

As I stirred the pot, I couldn’t help but think about all the years my mom filled our home with the same comforting aromas. Those simple family meals around the table are some of my most treasured memories.

Today, it wasn’t just soup. It was love, tradition, and a little piece of home in every spoonful. ✨recipe Ingredients

* ½ pound elbow pasta
* 1 (28 oz) can plum tomatoes
* 1 large onion, diced
* 3 large garlic cloves, minced
* Extra-virgin olive oil
* Salt and pepper, to taste
* 1 large bay leaf
* Dried Italian seasoning, to taste
* 1 (15 oz) can cannellini beans (with liquid)
* 1 (15 oz) can red kidney beans, rinsed and drained

Instructions

1. In a large pot, heat a generous drizzle of olive oil over medium heat.
2. Add the diced onion and sauté until soft and translucent.
3. Stir in the minced garlic and bay leaf; cook until fragrant.
4. Add the can of plum tomatoes, crushing them gently with a spoon.
5. Stir in the cannellini beans with their liquid and the rinsed, drained kidney beans.
6. Season with salt, pepper, and dried Italian seasoning to taste.
7. Bring to a boil, then reduce to a simmer and cook for about 30 minutes.
8. Meanwhile, cook the ditalini in salted boiling water until al dente.
9. Drain the pasta and stir it into the bean mixture. Let it simmer together for a few minutes until well combined.
