This Creamy Italian Chicken Pasta is one of those easy crockpot dinners that tastes like you put in way more work than you actually did! Tender shredded chicken, a rich creamy Italian sauce, Parmesan cheese, and pasta all come together for a simple, comforting supper.

You can keep it simple or add spinach, sun-dried tomatoes, bacon, and extra Parmesan to take it up another notch.

Creamy Italian Chicken Pasta

Servings: 6
Prep Time: 10 minutes
Cook Time: 6 to 7 hours

Ingredients:
2 lbs Chicken Breasts
1 Packet Italian Dressing Mix
8 oz Cream Cheese
1 Can Cream Of Chicken Soup
1/2 Cup Chicken Broth
1 Tbsp Minced Garlic
1/2 Cup Grated Parmesan Cheese
12 oz Penne Or Rotini Pasta, cooked

Optional, but a definite PLUS

Fresh Baby Spinach
Sun-Dried Tomatoes, slightly drained
Cooked Bacon Bits
Extra Parmesan Cheese

Directions:
1. Place the chicken breasts in the crockpot.
2. Add the Italian dressing mix, cream of chicken soup, chicken broth, and minced garlic.
3. Cover and cook on LOW for 6 to 7 hours, or until the chicken is tender and easily shreds.
4. Shred the chicken directly in the crockpot and stir it into the sauce.
5. Add the cream cheese in chunks. Cover and let it warm for 10 to 15 minutes, then stir until completely melted and the sauce is smooth and creamy.
6. Stir in the Parmesan cheese.
7. If using spinach and sun-dried tomatoes, stir them in now. Cover for another 5 to 10 minutes, just until the spinach wilts and everything is heated through.
8. Cook the pasta separately, drain well, and stir it into the creamy chicken mixture right before serving.
9. Top with cooked bacon bits and extra Parmesan cheese, if desired.
