This is your sign to stop searching and make this Stewed Tomato Butter Bean Ricotta Pasta instead. It’s creamy, cozy, packed with flavor, and comes together with way less effort than you’d think.
All you’re going to do is gently stew your tomatoes with Better Than Bouillon Vegetable Base, then add them to a blender with butter beans and ricotta and blend until completely smooth and silky.

Add your sauce back to the same pot you cooked your tomatoes in and simmer until you get the most luscious consistency, almost like a mac and cheese. Then top it all off with an epic toasted walnut and nutritional yeast crunchy topping.
