Ingredients
For the Dough
All-purpose flour (Paan piti) - 2 cups
Butter or curd - 2 tablespoons (for a crispy texture)
Sugar - 1/2 teaspoon
Salt - A pinch
Water - As needed to knead the dough
For the Filling:
Boiled potatoes (mashed)
Boiled carrots (finely chopped)
Boiled fish (bones removed and mashed/flaked)
Big onion - 1 (finely chopped)
Oil or butter - 1 tablespoon (for sautéing)
Thunapha (curry powder) - 1 teaspoon
Black pepper powder - 1/2 teaspoon
Turmeric powder - A small pinch
Salt - To taste
Step-by-Step Instructions
1. Making the Dough
In a mixing bowl, combine the all-purpose flour, a pinch of sugar, a pinch of salt, and butter or curd, and rub them together well.
Gradually add water as needed and knead the mixture until it reaches the correct patties dough consistency (smooth and non-sticky) to form a nice dough ball ("piti bōle").
Cover the dough ball with a damp cloth and let it rest for 20 to 30 minutes.
2. Making the Filling
Heat a pan with a little oil or butter, add the chopped onions, and sauté until golden brown.
Add the turmeric powder, curry powder, black pepper powder, and salt, and stir for a few seconds.
Now, add your prepared boiled potatoes, carrots, and fish.
Mix everything together well, adjust the salt to taste, cook on the stove for another 2 minutes, and then remove from heat. Let the filling cool down completely.
3. Shaping the Patties
Take the rested dough ball and divide it into smaller, bite-sized small balls.
Take one small ball, roll it out into a round shape that is neither too thick nor too thin.
Place a teaspoon of the fish, potato, and carrot filling in the center.
Fold it in half and seal the edges using a patties cutter, or press the edges together with your fingers or a fork to get a nice pattern.
4. Frying
Heat enough oil in a frying pan.
Fry the prepared patties on medium heat, turning both sides until they turn golden brown and crispy.
Your hot and crispy fish, potato, and carrot patties are ready to serve! Enjoy!
