Glycemic Index vs Glycemic Load

Watermelon has a glycemic index of 72. On paper that looks alarming, high enough that a lot of people cross it off their list to protect their blood sugar.

Here's why that's misleading, and why so many people avoid the wrong foods.

Glycemic index only tells you how fast a food spikes your blood sugar. It says nothing about how much of that food is actually in a normal serving. And that second part changes everything. A slice of watermelon is mostly water, so even though it hits fast, there's very little carbohydrate in a real portion. When you account for that, watermelon's true impact, its glycemic load, is only about four. Barely a blip.

This is the number most people have never heard of, and it quietly flips a lot of the food rules you've been following. Foods you were told to fear can be gentle. Foods that seem innocent can spike you hard.

In this clip I break down the difference, and how to use it. Then Chef Martin and I cook a blood-sugar-friendly breakfast that lands low on both scales.
