INSTRUCTIONS:
1. Boil 350g of pasta in salted water until al dente.
2. Pour olive oil into a pan and add 2 thinly sliced red onions. Caramelize slowly for about 10 minutes.
3. Once the pasta is cooked, reserve a generous deciliter of the cooking water and drain the rest.
4. Add 80g of chopped walnuts and 1 tbsp of balsamic vinegar to the caramelized onions. Stir briefly in the pan.
5. Transfer the drained pasta into the same pan, pour in 2-3 tbsp of cooking cream, and mix until even. If it seems dry, add a spoonful of the reserved cooking water as needed.
6. Remove the pan from direct heat. Sprinkle 150g of crumbled goat cheese over the hot pasta and let it melt for a moment, stirring gently.
7. Season with salt and black pepper. Serve immediately.
This might not look like much, but it works in the forest or at the cabin, and I promise it tastes great. I was honestly surprised how good the red onion turned out in the mix
