Sicilian summer on bread.
Comment “RECIPE” and I’ll send you my healthy caponata recipe.
You asked for my lighter version of caponata… and here it is.
Caponata is one of Sicily’s most iconic summer dishes, made with eggplant, tomato, onion, celery, olives, capers, extra virgin olive oil, vinegar, and that beautiful sweet-and-sour flavor Italians call agrodolce.
Like most traditional Italian recipes, every family has their own version.
Some make it sweeter, some more vinegary, some add raisins or pine nuts, some keep it simple. Mine keeps the soul of Sicilian caponata, but makes it feel a little lighter and easier for everyday cooking.
The secret is letting the vegetables cook slowly until soft and flavorful, then letting everything rest so the eggplant, tomato, olives, capers, vinegar, and sweetness come together.
You can serve it as an Italian appetizer, summer side dish, vegetarian dinner, Mediterranean meal, healthy comfort food, bruschetta topping, meal prep recipe, or room temperature antipasto.
But my favorite way?
A big spoonful on toasted bread.
This is authentic Italian food, Sicilian recipe, healthy Italian recipe, eggplant caponata, Mediterranean diet, summer vegetables, Italian appetizer, vegetarian Italian food, plant based meal, tomato recipes, eggplant recipes, olive oil recipes, capers, olives, agrodolce, sweet and sour sauce, Italian home cooking, traditional Italian food, easy summer dinner, healthy appetizer, bruschetta recipe, rustic Italian cooking, seasonal cooking, American home cooks, healthy recipes in America, Italian food in the USA, real ingredients, simple homemade food, and the kind of dish that tastes even better the next day.
