Hello, I’m Beck and welcome to my channel.
I started my YouTube journey because I wanted to share my love of our little home here in southern Indiana called Hickory Hills Farm.
We raise goats, chickens, and rabbits. We have two pet pigs, a shetland pony, as well as several dogs and cats. We also keep a large garden and grow the majority of our own vegetables right here on the farm, because it is both cheap
er and healthier.
In starting this channel, I want to let you enjoy this peaceful and healthy lifestyle along with us through my videos.

Hidden vegetable soup
4 cups chopped potatoes
2 cups chopped carrots
2 cups roasted beets ( measure after roasting)
1 onion chopped
4 cloves of garlic minced
3-4 tablespoons olive oil
1 to 1 1/2 quarts water or vegetable broth
If using water then you need vegetable stock cubes or bullion follow directions fir the amount of water you use.
2 tablespoons lemon juice
1 cup of milk or milk substitute of your choice
1 teaspoon sugar ( or a small apple but if using an apple chop it and add it in with the vegetables at the beginning) I used the sugar.
Dill to taste
Salt and pepper
I boiled the beets til fork tender then peeled and sliced . I used the air fryer and I spritzed them with olive oil. You can oven roast but it will take longer. You want them roasted and a little caramelized but not crispy.
Meanwhile sauté the rest of the vegetables in the olive oil til tender. You might need to add a little of the broth . When the beets are done add them to the pot with the rest of the broth. Start with a quart and see if you like the consistency before adding more. Once everything is soft you need to purée the soup. I used an immersion blender. You can let it cool completely and then use a blender. ( if you use a blender heat the soup back up before continuing) Check the consistency. I added a little more broth to mine. Add the lemon juice, milk and sugar. Salt and pepper to taste. Add the dill. I thought the dill was what made the soup. I don’t like beets but I really enjoyed this soup. The beets were not the main flavor. I served it with homemade whole wheat toasted bread.
