INGREDIENTS
Roasted Garlic
• 2 whole heads garlic
• 2 tsp extra virgin olive oil
Hummus
• 2 (15-ounce) cans chickpeas
• ⅓ cup tahini, well stirred
• Juice from ½ a lemon
• 2 tablespoons extra virgin olive oil
• 1 teaspoon kosher salt, plus more to taste
• ½ teaspoon ground cumin
• 2 tablespoons ice-cold water
• 2 tablespoons reserved chickpea liquid (aquafaba), chilled
For Finishing
• 5–7 whole roasted garlic cloves
• 8–10 whole chickpeas
• Extra virgin olive oil
• Smoked paprika
DIRECTIONS
1. Preheat oven to 400°F. Drizzle exposed garlic heads with olive oil, wrap securely in aluminum foil, place on a baking sheet, and roast for 45 to 55 minutes until tender and sweet. Set aside to cool.
2. Place drained chickpeas in a small saucepan, cover with water, and add a pinch of salt. Bring to a boil, cover, and simmer gently for 10 minutes. Drain, reserving a spoonful or two of whole chickpeas for garnish.
3. Mix reserved chickpea canning liquid (aquafaba) with cold water and ice in a squeeze bottle or container, then chill until ready to use.
4. Squeeze roasted garlic from one head into the bowl of a food processor. Add tahini, freshly squeezed lemon juice, salt, ground toasted cumin, and olive oil.
5. Process for about 1 minute, scrape down the sides of the bowl, and blend for an additional 30 seconds until completely smooth and emulsified.
6. Add the boiled, drained chickpeas into the food processor.
7. With the processor running, slowly stream in the chilled aquafaba-water mixture a couple of tablespoons at a time until the hummus reaches a light, velvety, and completely smooth texture.
8. Transfer hummus to a serving bowl and chill in the refrigerator for 20 minutes to allow the flavors to meld.
9. Use the edge of a spoon or spatula to create concentric swirl grooves across the surface while rotating the bowl.
10. Dust with smoked paprika, drizzle extra-virgin olive oil into the grooves, and garnish with reserved chickpeas, whole roasted garlic cloves from the second head, and a final light pinch of salt.
