This homemade Oreo Ice Cream Cake is layered with creamy ice cream, crushed Oreos, rich chocolatey goodness, and that nostalgic frozen cake texture we all grew up loving.
Homemade Cookies & Cream Ice Cream:
Ingredients
1 pint heavy whipping cream
1 (14 oz) can sweetened condensed milk
1 tsp pure vanilla extract
Crushed Oreos
Instructions
Before starting, place your mixing bowl and beaters in the freezer for 20–30 minutes. Cold utensils help the cream whip properly.
In a large chilled bowl, whip the heavy cream until soft peaks form.
Gently fold in the sweetened condensed milk and vanilla extract until fully combined.
Pour into an 8 or 9-inch cake pan lined with parchment paper.
Freeze for at least 6 hours or overnight until firm.
Fudgy Chocolate Cake:
Ingredients
1 1/4 cups all-purpose flour
1/4 tsp fine sea salt
1 tsp baking soda
1 tsp baking powder
1 cup sugar
1/4 cup Dutch-processed cocoa powder
(I used Hershey’s Dutch Processed Dark Chocolate Cocoa)
1/3 cup canola oil
1/2 cup hot water or hot coffee
(I used hot water)
1 large egg, room temperature
1/2 cup buttermilk, room temperature
1/4 cup whole-fat yogurt or sour cream, room temperature
(I used whole-fat yogurt)
1 1/2 tsp pure vanilla extract
Chocolate Fudge: Cold Stone Creamy Indulgent Fudge Dessert Topping
Whipped Cream Frosting
1 pint heavy whipping cream
2 tbsp powdered sugar
1 tsp pure vanilla extract
Whip all together until med-firm peaks
Preheat oven to 350°F.
Grease and line an 8 or 9-inch cake pan with parchment paper.
In a large bowl, whisk together the flour, salt, baking soda, baking powder, sugar, and cocoa powder.
Add the canola oil, hot water, egg, buttermilk, yogurt, and vanilla extract.
Mix until smooth. Do not overmix.
Pour batter into prepared cake pan. *batter will be runny -that's perfectly ok
Bake for 25–35 minutes, or until a toothpick inserted into the center comes out clean.
Allow cake to cool completely before assembling. (I let mine cool in the fridge)
*** I always use Fine Sea Salt because it has a more subtle taste, but kosher salt or regular table salt can also be used.
