Here's how to make these incredibly flavorful puffy street corn tacos.
Ingredients:
- Flour Tortillas
- Steak
- Queso Fresco
- Corn Kernels
- Jalapeño
- Onion
- Cilantro
- Mayo
- Lime Juice
- Garlic Powder
- Cayenne
- Salt & Pepper
- Butter
- Thyme
- Neutral Oil (for frying)
Step 1: Create the Street Corn
Add corn to a bowl along with diced jalapeños, onion, and fresh cilantro. Top with garlic powder, a little cayenne, salt, and pepper.
Finish with mayo, fresh lime juice, and crumbled queso fresco before mixing until everything is well combined.
Step 2: Cook the Steak
Salt a steak on both sides while preheating a pan to medium-high heat. Drizzle in a little oil before adding the steak, flipping every minute or so until it develops a crust on both sides.
Add butter and thyme to the pan and use a spoon to baste before removing the steak to rest on a cutting board.
Once rested, slice into thin strips against the grain.
Step 3: Fry the Tortillas
Preheat the oil to 350º, add the tortilla, and fry until golden and crispy on one side (don't flip).
Remove to a wire rack to drain the excess oil and repeat this process for the rest of the tortillas.
Step 4: Assemble the Tacos
Layer the thinly sliced steak on the unfried side of the tortillas. Top with a scoop of street corn, your favorite sauce or crema, and serve.
You heard her, folks— this is a Maria-approved recipe, so you know it's going to be incredible.
Save it, try it, and let me know what you think.
