How to bake the 1940s National Loaf.
1940s British National Loaf Bread
A simple wartime-inspired bread recipe
Preparation time: 20 minutes
Proving time: Approximately 1½ hours
Baking time: 35 minutes
Oven temperature: 210°C (190°C fan)
Ingredients
* 600 g (1 lb 5 oz) wholemeal flour
* 300 ml (10 fl oz) warm water
* 7 g (¼ oz) active dry yeast
* 1 teaspoon sugar
* 1 teaspoon salt
* A little milk for brushing (optional)
* A little flour and a sprinkling of oats for the topping (optional)
Method
1. Activate the yeast
Mix the warm water with the sugar and active dry yeast. Stir gently and leave for 10–15 minutes, until bubbly.
2. Mix the dough
Pour the yeast mixture into a large bowl. Gradually add the flour, mixing as you go. Add the salt and continue mixing until a dough forms.
3. Knead
Transfer the dough to a lightly floured surface. Knead for about 10 minutes, until smooth and elastic. If it is excessively sticky, add a little flour.
4. Shape and prove
Place the dough into a greased and floured loaf tin, or line the tin with baking paper. Cover with a clean tea towel and leave in a warm, draught-free place until doubled in size, approximately 1–1½ hours.
Aim for a proving temperature of around 35-40°C for the entire proving period.
5. Prepare the loaf
Brush the top with a little milk, if desired. Sprinkle with flour and oats.
6. Bake
Preheat the oven to 210°C (190°C fan). Place a small oven-safe dish of water inside if desired, taking care when handling hot water. Bake the loaf for approximately 35 minutes, until golden and cooked through.
7. Cool and serve
Remove the loaf from the tin and allow it to cool completely on a wire rack before slicing.
Enjoy your homemade National Loaf with butter, cheese or carrot jam!
⸻
Historical note: The National Loaf was introduced in Britain in 1942. It was made with national flour, a less-refined flour that retained more of the grain than white flour. This recipe is a modern home-baking interpretation inspired by wartime bread rather than a verified original government recipe.
