INGREDIENTS:
- 1 box of radiatori pasta (16 oz)
- 1 package of prosciutto (3 oz)
- 8 oz pesto
- 4 oz sun dried tomatoes (chopped into small pieces)
- 8 oz finely shredded parmesan cheese
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 balls of burrata cheese
- Salt and pepper to taste
- Fresh basil for garnish
INSTRUCTIONS:
1. Preheat the oven to 425°F. Bake the prosciutto on a parchment lined baking sheet for roughly 15 minutes, until it’s fully crisp. Chop the prosciutto into small pieces, and set aside.
2. Boil your pasta in salted water until al dente. Add the cooked pasta to a large bowl. Add the pesto, balsamic, sun dried tomatoes, salt, and pepper. Toss to combine, then let it chill in the fridge for 1 hour (or overnight).
3. Once you are ready to serve, add the crispy prosciutto and grated parmesan. Top with torn pieces of burrata and garnish with fresh basil.
