Instant Pot Pot Roast in 30 Minutes | Easy Weeknight Dinner

You don’t have to cook a pot roast all day to get a tender, comforting dinner on the table! I made this easy Instant Pot pot roast with a 2 lb roast, vegetables, and homemade gravy, and the pressure cook time was just 30 minutes.

The trick is cutting the roast into smaller chunks before cooking. Once it’s cut down, I use a simple rule of about 15 minutes of pressure cook time per pound. My roast was 2 lbs, so I pressure cooked it for 30 minutes.

Keep in mind that the Instant Pot will also need time to come to pressure and release pressure, so the total start-to-finish time will be a little longer than the actual 30-minute pressure cook time.

This is such an easy way to make a classic pot roast when you didn’t think about starting supper hours ahead of time. Tender beef, veggies, and plenty of gravy all in one comforting meal.

Cooking time:
2 lb roast, cut into smaller chunks = 30 minutes pressure cook time
Approximately 15 minutes per pound when the roast is cut into smaller pieces
