Ingredients ~
Chicken:
1 lb chicken breast, cut in half to create smaller pieces
1 1/3 cups buttermilk
2 eggs
1/4 cup hot sauce
1/4 cup pickle juice
1 Tbsp Cajun seasoning
2 tsp garlic powder
2 tsp onion powder
1 tsp cayenne pepper (use less if desired)
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper

1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 Tbsp Cajun seasoning
2 tsp garlic powder
2 tsp onion powder
1 tsp cayenne pepper (use less if desired)
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
Oil for frying

Biscuits:
Popeyes Biscuit Mix
1 Cup Cold Water
4 Tbsp Softened Butter

Honey Butter:
4 Tbsp Soften Butter
2 Tbsp Honey

Prepare the chicken. Pat the chicken breasts dry with paper towels. Next, slice the chicken breasts horizontally to create thinner cutlets. Cut each piece into smaller portions sized to fit the biscuits.

Make the seasoning blend. In a small bowl, combine the Cajun seasoning, garlic powder, onion powder, cayenne pepper, smoked paprika, salt, and black pepper. Stir until evenly mixed.

Prepare the marinade. In a large bowl, whisk together the buttermilk, eggs, hot sauce, pickle juice, and the prepared seasoning blend until fully combined.

Marinate the chicken. Add the chicken pieces to the marinade, making sure each piece is fully coated. Cover and refrigerate for at least 1–3 hours, or overnight for the best flavor and tenderness.

In a separate bowl, whisk together the flour, cornstarch, and seasonings.

Remove the chicken from the marinade, allowing the excess to drip off. Dredge each piece in the seasoned flour mixture, pressing firmly so the coating adheres well. Let the coated chicken rest for 10 minutes before frying.

Heat the oil to 350°F (175°C).

Fry the chicken in batches for 4–6 minutes, or until golden brown and fully cooked through. Transfer to a wire rack or paper towel-lined plate.

Let the chicken rest for 10 minutes, then increase the oil temperature to 375°F and fry the chicken again for 1 minute until extra crispy.

Next, Make The Biscuits. In A Large Bowl, Add The Biscuit Mix, Water, And Softened Butter. Mix Until Just Combined, Being Careful Not To Overmix.

Scoop The Dough Into 8–10 Even Portions (About 3 Tablespoons Each) Onto A Greased Baking Sheet. Bake At 400°F For 18 Minutes.

While The Biscuits Bake, Make The Honey Butter By Mixing Together The Butter And Honey Until Smooth.

Once The Biscuits Are Finished Baking, Brush The Honey Butter Over The Tops. Slice Each Biscuit In Half, Place A Piece Of Chicken On The Bottom Half, Then Top With The Remaining Biscuit Half. Serve Warm And Enjoy!
