Ingredients
200 g noodles
1 cucumber (cut into noodle-like strips)
1 carrot (cut into noodle-like strips)
2 boiled eggs (sliced)
1 cup cherry tomatoes (halved)
1 cup red cabbage (thinly shredded)
1 can tuna (drained)
Creamy Dressing
½ cup plain Greek yogurt
2 tbsp mayonnaise
1 tsp Dijon mustard
1 garlic clove (minced)
1 tbsp lemon juice
1 tbsp olive oil
Salt, to taste
Black pepper, to taste
How to Make It
Cook the noodles until tender. Drain, rinse with cold water, and let them cool.
Cut the cucumber and carrot into noodle-like strips using a julienne peeler or spiralizer.
Thinly shred the red cabbage, slice the boiled eggs, and halve the cherry tomatoes.
Drain the tuna well.
In a bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, garlic, lemon juice, olive oil, salt, and black pepper until smooth and creamy.
Add the cooled noodles, cucumber noodles, carrot noodles, red cabbage, cherry tomatoes, eggs, and tuna to a large bowl.
Pour the creamy dressing over the salad and gently toss until everything is evenly coated.
Chill for 15–20 minutes before serving.
Food Hack
Pat the cucumber noodles dry before mixing to keep the dressing thick and creamy.
Chill the salad before serving for the best flavor.
Garnish with fresh parsley if desired.
