All you do is pile everything in and simmer on low in a pot with heavy lid (must trap steam in - I used my STAUB cast iron Dutch oven) for 60-75 minutes. I made the soup with napa cabbage, apples, onions, carrots, chicken, ginger slices, green onions, gogi berries and Chinese dates! The apples & dates naturally sweetens the soup base and the onion & chicken brings out the umami flavors - so simple and so perfect for fall
