Matcha Nutella Croissant Pastry
For the dough
* 200 g warm milk
* 200 g warm water
* 115 g vegetable oil
* 30 g egg white
* 10 g instant yeast
* 8 g sugar
* 12 g salt
* 560–600 g all-purpose flour
* 12 g matcha powder
For the filling
* Nutella and or chocolate pieces, as needed
For the top
* 1 egg yolk, about 18 g
Instructions
Start with the warm milk, warm water, vegetable oil, egg white, yeast, sugar, and salt. Mix everything together, then gradually add the flour and knead until you have a nice, soft dough. You don’t want the dough too dry, so add the last part of the flour slowly.
Divide the dough into two equal pieces. Keep one dough plain. Add the matcha powder to the other half and knead until the matcha is completely incorporated and the dough has an even green color.
Cover both doughs and let them rise for about 40 minutes.
Roll out the plain dough. Place the matcha dough in the center, then fold the plain dough around it and seal it. Roll everything out together into a large circle.
Cut the dough into triangles. Add your chocolate spread or chocolate pieces to the wide end of each triangle, then roll them up into croissant shapes.
Place them on a baking tray, cover, and let them proof for another 30 minutes.
Brush the tops lightly with egg yolk and bake at 350°F / 180°C for about 25–30 minutes, until nicely baked and golden.
