This recipe is chef’s kiss [save it] Está receta está increíble [traducela abajo]
For the chicken:
1 1/2 lbs thinly sliced chicken breast ( I cooked 3 1/2 lbs in this video).
3tbsp soy sauce
1 tbsp toasted sesame oil
2 tsp minced garlic
1-2 tsp ground ginger
2tbsp hot honey or honey
Black pepper to taste
For carrot salad:
2 Carrots
1/2- 1 tsp grated ginger
1 tbsp soy Sauce
1/2 tsp sesame oil or extra virgin olive oil
2 green onions, chopped
1 tbsp honey
1 tbsp rice wine vinegar
1 tbsp lime juice
red chili flakes
Pinch of sea salt and pepper
How to:
The trick here is to thinly slice the chicken and let it marinate ( for a few hours but if in a rush, just marinate while you prep the veggies).
If you noticed I cooked the chicken throughly then separated it to let the juices thicken until they caramelized as this is what will add color and extra flavor.
If you see my bowl I added purple cabbage, radish, and a rice medley I get from Trader Joe’s but she had a traditional white rice bowl. I need a lot more fiber than her and we are slowly getting her to eat more bitter veggies as her palate becomes more mature.
The combination of avocado, the carrot salad, green onions, cilantro, cucumber and the super flavorful caramelized chicken is indeed super delicious. You can make so many variations of this bowl and I hope you love it as much as we did.
* use lime or pour the carrot salad juice that’s left on top of it.
