We met Gianfranca last week in Sardegna, where she showed us how to make one of the world’s most ancient pastas, called “Su Filindeu.” Su Filindeu comes from the mountainous Barbagia region of central Sardinia, particularly the province of Nuoro. It was traditionally prepared for pilgrims walking to the San Francesco di Lula sanctuary.
Gianfranca told us a local story behind it: a woman whose son had been imprisoned made a vow to God that if he were released and went on to live a good life, she would dedicate herself to making this pasta every year for the pilgrims in gratitude and devotion.
Her friend, an archaeologist, also explained that remains of Su Filindeu were found centuries ago on a ship , still remarkably intact. Because of this, it’s believed the pasta may originally have been used as a way to preserve and transport food during long journeys at sea.
