Slow Cooker Onion Gravy Pot Roast

This recipe yields an incredibly juicy beef pot roast that falls apart at the touch of a utensil, smothered in a rich, savory caramelized onion gravy.

Ingredients
3-4 lbs Beef chuck roast

2 large Sweet onions, sliced into thick wedges

6-8 cloves Whole garlic, peeled

1 tbsp Olive oil

1 cup Beef broth

2 tbsp Worcestershire sauce

1 packet Onion soup mix

Salt and coarsely cracked black pepper

Instructions
Season and Sear: Generously coat the chuck roast with salt and plenty of coarsely cracked black pepper. Heat olive oil in a large skillet over medium-high heat and sear the beef for 4–5 minutes on each side to lock in the juices.

Build the Base: Place the thick slices of onion and whole garlic cloves into the bottom of your slow cooker.

Layer the Roast: Rest the seared beef on top of the bed of onions and garlic. Whisk the beef broth, Worcestershire sauce, and onion soup mix together, then pour it over the meat.

Slow Cook: Cover and cook on LOW for 8 to 10 hours (or HIGH for 5 to 6 hours) until the meat effortlessly pulls apart with tongs.

Serve: Plate the tender beef slices and ladle the rich, deeply flavorful caramelized onion gravy and garlic over the top.
