Ingredients:
- Bread flour: 500g
- Milk: ~290g (add gradually, as flour absorption varies)
- Butter: 100g
- Salt: 10g
- Instant yeast: 10g
- Sugar: 20g
- Egg white: 1
- Egg yolk: 1 (reserved for egg wash)
- Filling: Any filling of your choice (savory minced meat & cheese, sweet fillings, etc.)
- Sesame seeds: For topping
Instructions:
1. Dry Ingredients: Sift the bread flour into a bowl. Add the sugar, salt, and yeast, mixing them in one by one.
2. Liquids: Mix the egg white with a portion of the milk. Gradually add the liquid mixture to the dry ingredients and knead until a dough starts to come together.
3. Butter & Kneading: Add the butter in two additions. Knead well until the dough becomes smooth, supple, and passes the windowpane test.
4. First Rise: Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rest for 45 minutes.
5. Divide & Rest: Turn the dough out onto a work surface and divide it into 2 equal parts. Shape them into smooth balls, cover, and let rest for 10 minutes.
6. Shaping: Roll out each dough portion, add your favorite filling, and shape it as shown in the video.
7. Second Rise: Place the shaped bread on a baking sheet. Cover and let it rise until visibly puffy. The exact proofing time depends on your room temperature; for me, it took about 60 minutes.
8. Egg Wash & Bake: Mix the egg yolk with a splash of milk and gently brush the dough. Sprinkle with sesame seeds. Bake in a preheated oven at 190°C (375°F) for around 20 to 25 minutes, until golden brown.
