The one thing I absolutely hate about adulthood is getting to see my parents only during festivals and long holidays. Every time it’s time to part ways, saying goodbye feels so hard.

Before Mum left, she asked me for just one thing: “Can you make something for me with your own hands?” How could I say no? I offered to make her favourite soup or pasta, and she asked for soupy pasta. So here’s a warm, one-pot bowl made with love ❤️

One-Pot Soupy Pasta

Boil 7–8 tomatoes in water until they’re soft. Peel off the skins and blend the tomatoes into a smooth puree. Pour the puree back into the kadhai, add finely chopped vegetables of your choice (I used capsicum), and bring it to a boil.

Add the pasta and enough water for it to cook. When it’s halfway cooked, add salt and corn. Stir in butter, red chilli flakes and oregano, then let it simmer until the pasta is cooked and the broth thickens to your liking.

Serve hot with fresh basil, a little cream and crushed black pepper.
