Chicken Chukka
Ingredients
1 kg chicken
Salt, to taste
½ tsp black pepper
½ tsp turmeric powder
2 tbsp oil
Whole spices:
1-inch cinnamon stick
2 cardamom pods
3 cloves
1 star anise
1 medium onion, thinly sliced (julienned)
1½ tbsp ginger-garlic paste
1 medium tomato, chopped
4 green chilies, slit
A handful of curry leaves
1 tsp red chili powder
1 heaped tsp coriander powder
½ tsp garam masala
Juice of ½ lemon
Fresh coriander leaves, chopped
Method
Marinate the chicken with salt, black pepper, and turmeric powder. Let it rest for 20 minutes.
Heat oil in a pan. Add the cinnamon, cardamom, cloves, and star anise. Sauté until fragrant.
Add the sliced onion and cook until translucent.
Stir in the ginger-garlic paste and sauté for 1 minute, until the raw smell disappears.
Add the marinated chicken and sauté for 2 minutes.
Add the chopped tomato, green chilies, and curry leaves. Mix well, cover, and cook for 10 minutes. The chicken will release its own moisture.
Add the red chili powder, coriander powder, and garam masala. Mix well until the masalas evenly coat the chicken.
Increase the heat to high and continue frying until all the moisture evaporates and the oil begins to separate.
Finish with a squeeze of lemon juice and garnish with fresh coriander leaves.
