This easy homemade mixed bean soup recipe is one I've been making for around 35 years! It's hearty, nourishing, budget friendly and packed with vegetables, mixed beans and a lovely tomato broth with just a little kick of chilli.
I first started making this soup in my late teens when money was extremely tight and I needed something inexpensive and filling to take to work for lunch. I'd take it in a flask, and whenever I opened it, someone would invariably say, "What's that gorgeous smell? I want some of that!" It was actually around this time that I started writing down my recipes. Goodness, I forget how old some of them are!
These days, I make my mixed bean soup using tinned or jarred beans, which saves time and makes it so easy to prepare. I also add fresh French beans, carrots, celery, red onion, tomatoes and a pinch of chilli for a little warmth. It's a lovely comforting soup for autumn and winter, especially when you're trying to eat well without spending a fortune.
It's also brilliant for batch cooking and freezing. I use reusable freezer bags from Amazon to store individual portions, and I love serving the soup in my beautiful lidded bowls, which make a humble homemade soup look far posher than it really is!
