This is the kind of recipe I want in my summer rotation.
Pool days don’t have to end with a drive-thru. ☀️
The secret isn’t making barbacoa from scratch after swimming… it’s having a plain chuck roast already cooked in the fridge or freezer. Then this whole dinner comes together while you rinse off.
Easy Barbacoa Beef Bowls
3 lbs cooked chuck roast, broken into chunks
Juice of 1 orange
Juice of 1 lime
½ cup beef broth
1 tsp apple cider vinegar
2 tsp salt
2 tsp garlic powder
1 Tbsp cumin
2 tsp oregano
Mix everything except the beef together. Toss with the cooked chuck roast, then air fry at 375°F for about 10 minutes, tossing once if you’d like, until the edges are browned and crispy.
Serve over rice with sautéed peppers and onions, shredded cheese, guacamole, salsa, and tortilla chips.
