Crispy hash brown, perfectly runny egg, crispy bacon, melty cheese & a homemade breakfast sauce all stacked on a buttery toasted brioche bun… this might be the breakfast sandwich of my dreams
For the Breakfast Sauce:
1/3 cup mayo
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp hot sauce
1/2 tsp garlic powder
1/2 tsp smoked paprika
Pinch of salt
For the Sandwich:
1 brioche bun
2 eggs
2 slices thick-cut bacon
1 frozen hash brown patty
2 slices American cheese
1 tbsp butter
Breakfast sauce
Salt & black pepper
Fresh chives, finely chopped
Optional Upgrades:
Caramelized onions
Avocado
Jalapeños
Pickled red onions
Maple drizzle
Instructions:
1. Mix together mayo, ketchup, mustard, hot sauce, garlic powder, smoked paprika & salt. Set aside
2. Cook bacon in a skillet over medium heat until deeply crispy. Transfer to a paper towel-lined plate and reserve about 1 tbsp of the bacon fat in the pan
3. Cook the hash brown in the bacon fat according to package directions, pressing it down occasionally, until deeply golden and ridiculously crispy on both sides. Season with a little salt
4. Butter the cut sides of the brioche bun and toast in a skillet until golden brown. Remove and set aside
5. Lower the heat to medium-low and melt a little butter in the pan. Crack in the eggs, season with salt & pepper, and cook until the whites are set but the yolks are still runny. For an extra crispy edge, let the whites spread slightly around the pan
6. Place a slice of American cheese over each egg and cover the pan for 30–60 seconds until the cheese is completely melted
7. Spread a generous layer of breakfast sauce on both sides of the toasted brioche
8. Stack it up: bottom bun → cheesy eggs → crispy hash brown → bacon → optional toppings → more breakfast sauce → top bun
9. Finish with fresh chives, give it a gentle press, slice straight through the middle & get that yolk drizzle
