INGREDIENTS:
2 small/medium red onions
• 2 tbsp extra-virgin olive oil
• 4 tbsp honey or hot honey
• ½ tsp flaky sea salt, plus more for serving
• ½ tsp black pepper
• 6–8 sprigs fresh thyme, plus more for serving
• 3 oz Gruyère cheese, thinly sliced
• 1 sheet frozen puff pastry, thawed
• 1 large egg + 1 tsp water, for egg wash
• Balsamic glaze, optional for serving
INSTRUCTIONS:
Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Slice onions into ¼-inch-thick rings, keeping the layers together. Create 6 evenly spaced patches of olive oil on the parchment, drizzle with honey, and sprinkle with salt and pepper. Add thyme sprigs, then arrange the onion slices over the top, filling in any gaps.
Layer Gruyère cheese over the onions. Roll out the puff pastry into a rectangle slightly larger than the onion layer and drape it over the top. Press the edges with a fork and brush with egg wash.
Bake for 25–30 minutes until the pastry is puffed and deeply golden. Let cool for 5–10 minutes, then carefully flip the tart onto a cutting board and remove the parchment. Finish with balsamic glaze, fresh thyme, and flaky salt. Slice into squares and serve!
