This crispy onion chicken needs just three ingredients and comes from the oven beautifully golden, crunchy and juicy. There’s no flour, breadcrumb coating or complicated seasoning mixture.
The chicken is covered with a thin layer of mayonnaise and pressed into crushed crispy fried onions. The mayonnaise helps the coating stick, encourages browning and protects the chicken breast as it cooks.
It is a simple way to turn an ordinary packet of chicken breasts into a properly crisp family dinner with very little preparation. Serve it with chips, mashed potatoes, salad or vegetables.
