INGREDIENTS:

• Large flour tortillas — 2 Pcs.
• Eggs — 3 Pcs.
• Cheddar cheese — 2 slices (about 40 g)
• Vegetable oil or butter — for greasing the skillet
• Salt — to taste

INSTRUCTIONS:

1.Cut each tortilla into 4 equal wedges.
2.Lightly grease a non-stick skillet with vegetable oil or butter.
3.Arrange the 4 tortilla wedges from the first tortilla in the skillet, leaving only small gaps between them.
4.Beat the eggs with a pinch of salt.
5.Pour the egg mixture evenly over the tortilla pieces, gently tilting the skillet to distribute it.
6.Cover with a lid and cook until the eggs begin to set.
7.Arrange the wedges from the second tortilla on top of the cooked egg mixture.
8.Carefully flip everything over using a spatula so the second tortilla is on the bottom.
9.Place the cheddar cheese slices over one half of the tortilla.
10.Fold the other half over the cheese to form a large half-moon.
11.If desired, flip once more and cook for another minute until both sides are golden and crispy.
12.Transfer to a cutting board, slice into portions, and serve hot.
