Sloppy Sheet Pan Enchiladas are such a perfect weeknight dinner. It’s easy, delicious, and the entire recipes costs me like $13 in groceries haha!

Sloppy Enchiladas:
1 onion diced
1lb ground beef
1 tbsp mince garlic
1 tsp each; chili powder, cumin
1/2 tsp each; onion powder, garlic powder, paprika, pepper
1/4 tsp each; sea salt, cayenne pepper
2C enchilada sauce
7oz diced green chilis
10oz rotel, drained
1 can black beans, drained & rinsed
10 corn tortilas, cut into strips
2C shredded colby cheese
1/4C diced cilantro

1.sauté beef, garlic, & onions
2.stir in seasonings, tomatoes, chilis, & beans
3.mix in 1/2 the sauce, 1/2 the cheese, & tortillas
4.*spread onto sheet pan, or finish the recipe in your skillet
5.top w/ remaining sauce & cheese
6.either bake in oven for 10-12 min at 400 or finish as a skillet by covering with lid & melting cheese
7.top w/ cilantro
