You can make fresh homemade pasta easily using just flour, eggs, a pinch of salt, and a splash of olive oil.
To make homemade pasta from scratch using the traditional counter well (nest) method, pile 2 cups of flour on your clean counter, form a deep well in the center for your eggs, and mix them gradually.
First, build the volcano: Pour your flour directly onto a clean wooden or laminate countertop. Use your fist to press a wide, deep well (a crater) into the very center of the mound. Make sure the walls of the well are thick and sturdy so the eggs do not break through. Crack your room-temperature eggs directly into the center well. Add the salt and olive oil right into the eggs. Whisk and incorporate using a fork to beat the eggs together gently inside the well. Slowly start pulling inner-rim flour from the walls into the wet center, a little at a time. Keep the surrounding flour wall intact as long as possible to avoid a liquid mess on your counter
