HEALTHY BREAKFAST IDEA, PART 22
Per serving: 400 cals, 30g protein, 11g fiber.
Chances are, you’re trying to eat healthier and actually stay full after breakfast.
This Hot Honey Breakfast Power Bowl has become one of my favorite high-protein breakfast recipes because it checks all the boxes: protein, slow-digesting carbs, healthy fats, and fiber. It’s warm, savory, fresh, a little sweet, a little spicy, and keeps me full for hours. A true game changer for me in my 150lb+ weight loss journey.
If you are watching carbs, feel free to use delicata squash, spaghetti squash, or even roasted zucchini instead of butternut squash or sweet potato. This also works great for anyone looking for lower carb breakfast ideas, blood sugar friendly meals, or easy meal prep breakfasts.
Here is how I made it (multiply for more servings):
1.Finely dice 1 cup of butternut squash (or sweet potato). You want it diced small so it cooks faster and caramelizes better. Drizzle with 1/2 tsp olive oil and season with salt, pepper, 1/2 tsp smoked paprika, 1/2 tsp oregano, and a pinch of chili lime seasoning or tajin. Add to a tray and roast at 400F for 27–30 minutes, until golden and crispy around the edges.
2.Thinly slice 1 Persian cucumber and a little red onion. And some fresh herbs like cilantro, parsley, and/or mint.
3.Cook 2 eggs sunny side up (or however you like your eggs) in a pan sprayed with oil over medium heat until the whites are set but the yolks stay jammy.
4.Build your breakfast bowl. Add the roasted squash, 1 serving of cottage cheese, the cucumber and onion, 1/4 avocado, and the eggs.
5.Use your favorite hot honey sauce, or make my version. For the low sugar hot honey sauce, in a small pan over low heat, stir together 5 tbsp sugar-free (or regular) honey, 2 tbsp sriracha, 2 tbsp rice vinegar, 1 tbsp soy sauce, and 1/2 to 1 tsp chili flakes for about a minute. Drizzle about 1–2 tbsp over the bowl.
If you try it, let me know on SHREDHAPPENS!
Enjoy!!
