Creamy High-Protein Spinach, Mushroom & Corn Toast
Serves: 5 Toasts
Ingredients
For the Filling
* 1 tsp butter
* 4–5 garlic cloves, finely chopped
* 200 g mushrooms, finely chopped
* ½ cup boiled sweet corn
* 300 g spinach, roughly chopped
* Salt, to taste
* Freshly crushed black pepper, to taste
For the High-Protein Creamy Dressing
* 150 g paneer
* 2 heaped tbsp thick curd
* 8 cashews
* Water (just enough to cover the cashews)
For Assembling
* 5 slices high-protein bread
* Chilli flakes
* Mixed herbs
* Crunchy garlic (optional)
Method
1. Heat 1 teaspoon butter in a pan and sauté the chopped garlic until fragrant.
2. Add the mushrooms and cook until they release their moisture and begin turning golden.
3. Stir in the boiled sweet corn, season with salt and pepper, and cook for another 2–3 minutes. Add the spinach and cook until it wilts completely and most of the moisture evaporates.
4. Meanwhile, soften the cashews by microwaving them with just enough water to cover them for 1 minute.
5. Transfer the softened cashews (along with the soaking water) to a blender. Add the paneer and thick curd, then blend until smooth and creamy.
6. Reduce the flame to the lowest setting (or switch it off briefly) and pour the creamy dressing into the spinach mixture.
7. Mix well and cook gently for another 1–2 minutes. Finish with chilli flakes and mixed herbs.
8. Grill the bread in a sandwich griller or toaster until crisp. One of my favourite hacks is using a griller because it gives beautifully crisp toast without needing extra butter. If you’re using a pan, you can lightly brush some butter if you prefer.
9. Generously spread the creamy spinach mixture over each toast and finish with crunchy garlic, chilli flakes and mixed herbs. Serve immediately.

The paneer and curd create a creamy, indulgent sauce without using heavy cream, while spinach, mushrooms and garlic add plenty of micronutrients and antioxidants. It’s an easy way to increase your daily protein and vegetable intake, supports satiety, is meal-prep friendly, and makes a wholesome breakfast or light meal that comes together in minutes.
