How Italians Make Creamy Pasta Without Cream | Zucchini & Tomatoes | Food That Looks After You

If you have ever wondered how Italians make beautifully creamy pasta without using cream, this simple zucchini and tomato recipe reveals one of the traditional kitchen tricks that has been quietly passed down through generations. Using a humble boiled potato instead of cream, the sauce becomes naturally silky while allowing the sweetness of fresh tomatoes, zucchini, basil and olive oil to shine through. It is authentic Italian home cooking at its most resourceful, proving that a handful of everyday ingredients can create something wonderfully satisfying.

In this Food That Looks After You episode I also share one of the little cooking ideas my mum used from time to time when I was growing up in Sicily. Rather than relying on cream, she would use a simple boiled potato to give tomato sauces a beautifully smooth texture. It is one of those wonderfully practical ideas that reminds us how traditional Italian home cooking has always been about making the most of simple ingredients rather than expensive ones. Whether you grow your own zucchini or buy everything from the supermarket, this recipe can be enjoyed throughout the year and adapted to suit your own kitchen.

This is not pasta made rich by cream. It is pasta made rich by tradition, simplicity and good ingredients. Food that quietly looks after you, one bowl at a time.

Ingredients
200g (8 oz) rigatoni
3 small yellow zucchini (or any zucchini you have available)
1 medium green zucchini
250g (9 oz) plum or cherry tomatoes
1 small boiled potato
2 tbsp ricotta (optional)
4 tbsp extra virgin olive oil
1 large garlic clove, thinly sliced
1 mild chilli pepper, thinly sliced (optional)
A generous handful of fresh basil
1 tbsp tomato purée
Salt and freshly ground black pepper

Method
Boil the potato in well salted water until tender. Remove it and keep the cooking water because it will also be used to cook the pasta.

Cook the rigatoni in the same water. A couple of minutes before the pasta is ready, add the sliced zucchini so they remain tender while still keeping a lovely bite.

Meanwhile, gently warm the olive oil and soften the garlic and chilli over a low heat without allowing them to brown. Add the boiled potato and mash it directly into the pan with a fork before stirring in the tomatoes, tomato purée and half of the basil. Season with salt and pepper and allow everything to cook gently until the tomatoes release their juices.

Transfer the cooked pasta and zucchini directly into the sauce together with a little of the starchy cooking water. Toss gently until the potato, tomato juices and pasta water combine into a beautifully creamy sauce.

Fold through the ricotta if using, finish with the remaining basil, an extra drizzle of olive oil and freshly ground black pepper, then serve immediately.

This dish is equally delicious with Parmigiano Reggiano, Pecorino Romano or simply without cheese. If fresh tomatoes are out of season, good quality whole tinned cherry tomatoes make an excellent alternative.
