HOW TO PREPARE WHOLE ROASTED CHICKEN | Lovelyn Enrique

To prepare a whole roasted chicken, pat the bird completely dry, rub it with butter or oil and seasonings, and roast it at 425°F (220°C) for about 50 to 80 minutes.

Step 1: Prep the Chicken

Remove the chicken from its packaging and take out any giblets hidden inside the cavity.

Pat the entire chicken very dry with paper towels. Dry skin is the secret to getting a crispy exterior.

Tuck the wing tips underneath the bird so they do not burn while cooking.

Step 2: Season and Stuff

Gently slide your fingers under the skin over the breast meat to loosen it from the meat.

Rub softened butter or olive oil under the skin and all over the outside of the chicken.

Sprinkle salt, black pepper, garlic powder, and dried or fresh herbs generously inside and out.

Stuff the main cavity with aromatics like halved lemons, smashed garlic cloves, and fresh herbs like rosemary or thyme.

Step 3: Roast in the Oven

Preheat your oven to 425°F (220°C).

Place the chicken breast-side up on a roasting rack or in a cast-iron skillet. You can also place chopped carrots and onions at the bottom of the pan.

Roast for roughly 20 minutes per pound, or until a digital meat thermometer inserted into the thickest part of the thigh (not touching bone) reads 165°F (74°C). Total time is usually 50 to 75 minutes depending on size.

Step 4: Rest and Carve

Remove the chicken from the oven and transfer it to a cutting board.

Let the chicken rest uncovered for 10 to 15 minutes before carving. This lets the juices settle so the meat stays moist
