So I have another absolute banger for you in my budget busting series, a Thai inspired stir fry using knock off spam. Well it's not really knock off to be fair, it's a great product in it's own right. It's less salty than spam, and you get more for your money. It's great little stir fry this, it's cheap, tasty and can be on the table in around 10 minutes once you've done your prep. And, this will feed 2 hungry people and costs around £5 depending where you shop.

To make my budget Thai inspired pork luncheon meat stir fry you will need:
►1 x 250g tin of pork luncheon meat (I used tulip brand)
►4 x medium sized spring onions
►1 x 225g can of water chestnuts
►2 x dried noodle nests (I used lucky boat)
►1 x tbsp of ginger garlic paste or 2 garlic cloves and same amount of fresh ginger finely sliced
►1 tbsp of dark soy sauce
►1/2 tbsp of fish sauce (if you don't have this, just add another tbsp of soy sauce)
►2 green finger chillies
►A handful of green beans (about 150g)
►1 lime
►2 handfuls of fresh bean sprouts (about 150g)
►A small handful of fresh coriander finely chopped, stalks as well.
►1/2 tsp of MSG (optional)
►1+1/2 tbsp of veg or sunflower oil
►Few pinches of sugar to taste
►Salt if needed (taste at the end and adjust)
