Stop walking past eye of round at the grocery store. I’m turning this $21 roast into juicy, thinly sliced roast beef, with enough for a dinner for six.
This cut is lean, so how you prepare it matters. I’ll show you how I salt it ahead of time, roast it with a thermometer, finish the outside with Carolina BBQ sauce, and let it rest with butter before slicing.
Pile it onto bread for roast beef sandwiches, serve it with rice and vegetables, or use those thin slices for another meal.
My roast was about 3 pounds at $7 per pound. With the sauce and accompaniments, I estimated the meal at around $25 to $26. Split between six people, that’s less than $5 each. Your cost will depend on local prices and what you serve with it.
