Italian Sausage & Pepper Pasta | SAVE RECIPE ⬇️
Servings: 10
Prep Time: 20 minutes
Cook Time: 45–55 minutes
Total Time: About 1 hour 15 minutes
Ingredients
10 Italian sausages
2 lbs penne pasta
4–5 bell peppers, sliced lengthwise
2 large red onions, sliced lengthwise
2 jars (24 oz each) tomato sauce
2 cups heavy cream
3–4 tbsp beef tallow, for cooking
1 bunch fresh basil, chopped
Kosher salt, to taste
Reserved pasta water, as needed
Olive oil, for finishing
Instructions
1. Cook the Sausage
Preheat oven to 375°F.
Fill a very large stock pot with water, season generously with salt, and bring to a boil.
Meanwhile, heat the beef tallow in a very large braising pan over medium heat. Sear the Italian sausages in batches, browning them nicely on both sides.
Transfer the browned sausages to a sheet pan and finish cooking in the oven until they reach an internal temperature of 160°F.
2. Cook the Peppers & Onions
While the sausages finish cooking, add the sliced peppers and red onions to the same braising pan.
Season with salt and sauté for about 15 minutes, stirring occasionally, until they soften and start to caramelize.
Add the tomato sauce and season with a little more salt. Let the sauce simmer for about 10–15 minutes.
3. Cook the Pasta
Once the water is boiling, add the penne and cook according to the package directions until al dente.
Before draining, reserve a couple cups of the pasta water.
4. Finish the Sauce
Once the tomato sauce has simmered, stir in the heavy cream.
Drain the pasta and add it directly to the braising pan with the creamy tomato sauce, peppers, and onions. Toss everything together.
Add a little reserved pasta water as needed to loosen the sauce and help everything come together.
5. Add the Sausage
Once the sausages are finished cooking, slice them into bite-sized pieces.
Add the sausage pieces to the pasta and toss everything together.
Stir in some freshly chopped basil.
6. Serve
Serve immediately with more fresh basil on top and a drizzle of olive oil.
And that's it—Italian sausage, peppers, onions, and creamy tomato pasta all in one dish.
