Lay a duck breast skin side down in a cold cast iron pan and let the fat render itself out over low coals. When the skin is deep and crackling you turn it, splash in red wine, crush a handful of blackberries into the fat, and swirl in cold butter for a dark glossy sauce. Sliced against the grain the meat is still rose pink in the middle. One pan, autumn woods, done in under twenty minutes.
INGREDIENTS
- 2 duck breasts, about 300g each, skin on
- 1 tsp flaky salt, plus more to finish
- black pepper
- 120ml red wine (something you would drink)
- 1 heaped cup blackberries, about 150g
- 30g cold unsalted butter, cubed
- 1 tsp honey or redcurrant jelly, optional, to round the sauce
- 1 small sprig thyme, optional
METHOD
1. Build a fire and let it burn down to a low, even bed of coals. You want gentle heat, not flame.
2. Pat the duck breasts dry. Score the skin in a tight crosshatch through the fat but not into the meat. Season the skin well with flaky salt, the flesh with salt and pepper.
3. Set the breasts skin side down in a cold dry cast iron skillet, then place the skillet on the coals. Starting cold is what renders the fat properly.
4. Cook skin side down 8 to 12 minutes, pouring off excess fat into a tin as it collects, until the skin is deep brown and crisp and most of the fat layer is gone.
5. Turn the breasts, add the thyme, and cook flesh side down 2 to 4 minutes for medium rare, an internal 54 to 56C. Lift onto a board to rest, skin up, at least 5 minutes.
6. Tip almost all the fat from the pan. Pour in the red wine and let it bubble hard, scraping the base, until reduced by half.
7. Add the blackberries and the honey if using. Press some of the berries with a spoon and simmer 2 to 3 minutes until glossy and lightly thickened.
8. Off the heat, swirl in the cold butter a cube at a time until the sauce shines. Taste for salt.
9. Slice the duck against the grain, spoon the blackberry sauce over, and finish with a little more flaky salt.
