This is Dumb Dinners, my series where dinner is so easy it’s kind of dumb. If this is the first one you’ve seen, I’m really hoping it’s not the last one you make with me.

Dumb Dinners: Lazy Beef Ragu Gnocchi

What you need:
1 boneless chuck roast (2–2½ lb)
1 regular jar marinara
3 tablespoons tomato paste
2 small beef bouillon cubes
2 tablespoons balsamic vinegar
1 cup shredded carrots
¾ teaspoon dried thyme
Black pepper
2 packages shelf-stable potato gnocchi
1 cup grated Parmesan, plus more for the top
Fresh basil

How to make it:
Add the roast, marinara, tomato paste, bouillon cubes, balsamic, carrots, thyme, and pepper to a crockpot. Stir the sauce around the roast.
Cover and cook on HIGH for 5–6 hours, until the beef pulls apart easily with a fork.
Shred the beef right in the pot and stir.
Add both packages of gnocchi, stir, and press them into the sauce. Cover and cook on HIGH for 30–40 minutes, stirring once halfway.
Stir in 1 cup of Parmesan.
Scoop into bowls and top with more Parmesan and torn basil.
