This red lentil pasta is plant-based, gluten-free, high-protein, and comes together in under 30 minutes.


Ingredients:
1.5 cup dry red lentils
2 flax eggs (2 tbs + 6 tbs water)
1 tbs olive oil

Sauce:
1/4 cup extra virgin olive oil
4-5 cloves of garlic, sliced
1/2 cup pasta water
1/4 cup parsley, chopped
Crushed red pepper
Salt
Black pepper
