Monkfish Tikka Masala, cooked from scratch. Very easy recipe.

In this video, I’ll show you how to make a simple and delicious Tikka Masala completely from scratch. Don’t worry if you don’t have monkfish — this recipe works brilliantly with pretty much anything. You can swap in other fish, prawns, chicken, lamb, beef, or even keep it vegetarian with your favourite vegetables. The sauce and method stay exactly the same, so it’s a versatile one you can come back to again and again.

I’ve also included some highlights from a recent competition where I was awarded bronze medal (3rd place) at UK Curry Chef of the Year, competing against some of the best chefs in the country. It was very tough competition, and I’m genuinely delighted with the result. Each year I’m improving, and next year I’m aiming even higher — definitely a competition that pushes you to do your homework and bring your A-game.
