Peach Cobbler Cake from Cake Mix (inspo from Mimo Ahmed)
Cake Ingredients:
• 1 box vanilla / white / yellow cake mix (15.25 or 13.25)
• 2 eggs, room temperature
• ¼ c butter, melted and cooled
• 1 c buttermilk (cold)
• 1 tsp vanilla bean paste or extract (Mexican vanilla preferred)
Peach Filling Ingredients:
• 3 medium ripe peaches (or 1-15 oz can)
• ¼ c dark brown sugar
• 2 tsp ground cinnamon
• 1/8 tsp ground nutmeg
• 1/8 tsp salt
• 1 tsp vanilla bean paste or extract (Mexican vanilla preferred)
• 1 tsp lemon juice
• 1 tbsp cornstarch
Additional Ingredients:
• ½ c butter for baking dish
Instructions:
1. Peel and quarter fresh peaches: Wash peaches, score bottom of each with an x. Bring water in a large pot to a boil and prepare a large bowl of water and ice cubes. Blanch peaches by lowering 1 at a time into boiling water for 30 – 60 seconds, then immediately transfer to ice water to stop the cooking process. Peel the skin off the peach by grabbing a piece from the corner of the x and pulling off. Skin should peel right off. Complete for each peach, then quarter each peach.
2. Make peach filling: in a bowl toss peaches with brown sugar, cinnamon, nutmeg, salt, vanilla, lemon juice, and cornstarch – set aside.
3. In a separate bowl add cake ingredients, mix until smooth. Cover bowl with plastic wrap and hydrate batter for 15-45 minutes. While batter hydrates add 9x13 baking dish to the oven with a stick of butter (1/2 c) and preheat oven to 350.
4. Remove warm dish from oven when butter is melted. Give cake batter 1 final mix by hand, then pour evenly over melted butter.
5. Spoon the peaches and their juices over the cake batter.
6. Bake 45-55 minutes until the top is golden and the fruit is bubbling at the edges.
7. Allow to cool for 15 minutes then serve with vanilla ice cream.
