This No-Bake Biscoff Cheesecake is creamy, rich, and packed with cookie butter flavor from the buttery Biscoff crust to the silky cheesecake filling and melty cookie butter topping.
Ingredients:
For the Biscoff crust:
• 1 package Biscoff cookies, 8.8 oz (250g)
• 1/3 cup unsalted butter, melted (75g)
For the filling:
• 16 oz full-fat brick-style cream cheese, room temperature (452g)
• 1/4 cup powdered sugar (50g)
• 3/4 cup creamy Biscoff cookie butter (210g)
• 1 tsp ground cinnamon
• 1 tsp pure vanilla extract
• 1 cup heavy whipping cream, cold (240ml)
For the topping:
• Melted Biscoff cookie butter
• Crushed Biscoff cookies
How to make it:
• Crush the Biscoff cookies into fine crumbs, then mix with melted butter until the texture looks like wet sand.
• Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a cup to pack it down tightly.
• In a large bowl, beat the cream cheese until smooth and creamy.
• Add powdered sugar, Biscoff cookie butter, cinnamon, and vanilla. Mix until the filling is fully smooth and thick.
• In a separate bowl, whip the cold heavy cream until stiff peaks form.
• Gently fold the whipped cream into the cream cheese mixture until no streaks remain. This keeps the cheesecake light, creamy, and fluffy.
• Spread the filling over the Biscoff crust and smooth the top.
• Cover and refrigerate for at least 8 hours, or overnight for the best clean slices.
• Once set, top with melted Biscoff cookie butter and plenty of crushed Biscoff cookies.
Slice cold and serve for the dreamiest no-bake holiday dessert.
