Today we are in Aci Castello with Maria Rosaria — or as everyone calls her, Sara or Sarina. In this episode, we explore Cavolo Trunzo, a purple cabbage that grows only in this region, thanks to the volcanic soil surrounding Etna. Nothing of the cavolo gets wasted! The most delicate leaves can be served raw in a fresh salad, while the rest becomes the base for a wonderful pasta dish.
